PRODUCT DESCRIPTION

Veronica is an attractive and unusual Romanesco type cauliflower. A striking example of fractal geometry found in nature, its lime-green heads form spirals upon spirals of turreted spears. 

Romanesco Veronica has a slightly smoother than the traditional white cauliflowers with a nutty, earthy flavor and slightly crunchy texture.

Plants can grow to up to 75cm tall before producing flower buds. They will do best when planted in the summer for a fall harvest, or winter harvest in mild climates.

Interesting note: Romanesco types are often referred to as calabrese but, botanically, they are still cauliflower.

Growing Romanesco from Seeds

Sow Indoors 6 weeks before the last expected frost date. Transplant outside once the soil temperature is at least 60°F.

Sow Outdoors 2–3 weeks before the last expected frost date. For an autumn crop, sow 9 weeks before the first expected frost date.

Romanesco grows best in cool weather. Buds will not develop well in extreme heat or drought. It will survive frost down to 20–25°F, although any mature heads will be damaged in a hard freeze. Romanesco does best in full sun but will tolerate partial shade. It prefers loose, well-drained loamy soils with a high amount of organic matter and consistent soil moisture. Add compost or an organic fertilizer that is higher in potassium and phosphorus than nitrogen to your soil before planting.

When harvesting, leave approx 5cm of stem attached to the base.
